1. Pearl Oyster Mushroom and Garlic Shrimp Scampi

Ingredients:

  • 200g pearl oyster mushrooms, cleaned and sliced
  • 200g large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup white wine (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the pearl oyster mushrooms and cook for 4-5 minutes until they start to brown.
  4. Push the mushrooms to one side of the skillet and add the shrimp to the other side. Cook the shrimp for 2-3 minutes per side until pink and opaque.

  6. Return the cooked beef to the skillet.
  7. Pour in the soy sauce and sesame oil. Stir-fry for another 1-2 minutes.
  8. Season with salt and pepper to taste.

3. Creamy Pearl Oyster Mushroom and Chicken Pasta

Ingredients:

  • 200g pearl oyster mushrooms, cleaned and chopped
  • 200g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz penne pasta
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, melt the butter over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  • Cooked rice or noodles for serving

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over high heat.

Ingredients:

  • 200g pearl oyster mushrooms, cleaned and torn into bite-sized pieces
  • 4 cups fresh baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled goat cheese (or vegan alternative)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • Toasted pine nuts (optional)

Instructions:

  1. In a large salad bowl, combine the fresh baby spinach, cherry tomatoes, and red onion.
